2020 Pouilly-Fuissé `Vieilles Vignes`, Domaine Corsin, Burgundy, France
Pouilly-Fuissé is another one of three appellations from the Domain Corsin family. This Chardonnay still follows within the distinct green notes and white flower that we see from this winery in general. This specific bottle is also showing woody and vanilla notes on the nose and palate. This wine is a very sophisticated fuller body white that fully exhibits the finesse and world renowned southern Burgundy Chardonnay!
At the Corsin Domain, there is more than a century of genuine passion for the white wines of Burgundy, which is present at each stage of the vinification, resulting in the production of wines belonging to the most famous Burgundy appellations. A traditional approach to harvest, the Domaine Corsin team follow the footsteps of their forefathers who observed the flower of the lily to fix the date of the grape harvest: the 100th day after flowering. Today, the frequent inspections, the methodical analyses, and the comparison of data make it possible to fix the right day to launch the harvest.
Food pairing: The mineral notes are pairing well with seafood. The well-balanced acidity goes nicely with white meat like veal or poultry, and for sure goat cheese. Its rich aromatic notes pair well with spicy and exotic foods and the acidity will also support sushi and sashimi.
This wine is a bright gold colour in the glass with aromas of ripe, tropical fruit and notes of brioches. The palate is smooth and balanced with hints of fresh pear and lemon. Chardonnay 100%.
