Pouilly-Fuissé, Château de Chaintré, Burgundy, France, 2018
Château de Chaintré is run by young winemaker Yannick Paquet. Yannick is the son of Jean-Paul and Monique Paquet, who established themselves in Pouilly Fuissé in 1959. Together the family owns three Pouilly Fuissé domaines and have been making wines since 1971. After the grapes were hand harvested, they were sorted to ensure only the healthiest and ripest grapes were vinified. The grapes were pressed gently with a pneumatic press before being transferred to stainless-steel tanks to settle and ferment using indigenous yeasts. The wine was then aged, 90% in stainless-steel tanks and 10% in oak barrels (50% new and 50% second and third fill), for 11 months on fine lees to add depth and complexity. The 2018 growing season began with a wet spring which provided adequate groundwater reserves and caused earlier than normal flowering. This was followed by a hot, dry summer. The grapes harvested were of a good quality and with relatively high yields.Yannick owns four hectares of vines in Pouilly-Fuissé. The vines are 35 years old on average and are planted at 200-300 metres above sea level. The south and south-west exposure on the limestone and clay soils give the wine the ripeness and weight that is characteristic of Pouilly-Fuissé. The family practises sustainable viticulture and annually applies organic fertiliser to every plot dependent on need. Meticulous leaf plucking to increase airflow and exposure to sunlight is employed to combat fungal diseases instead of using sprays.
Food pairing: The mineral notes are pairing well with seafood. The well-balanced acidity goes nicely with white meat like veal or poultry, and for sure goat cheese. Its rich aromatic notes pair well with spicy and exotic foods and the acidity will also support sushi and sashimi.
This wine is a bright gold colour in the glass with aromas of ripe, tropical fruit and notes of brioches. The palate is smooth and balanced with hints of fresh pear and lemon. Chardonnay 100%.
