Hidden in the hills of the Pyrenees is a charming old stone farmhouse Ferme Carrere dit Coustie. The 300 sheep give their milk for cheese making from December to June when they are then sent on their ‘vacation’ to roam the hills of the Barétous valley. A few sheep are kept in the farm for a little more cheese making to keep the stocks from depleting.
A wonderful silky nutty rich tasting cheese.
